Garlic Roasted Cheesy Sheet Pan Asparagus
An easy side dish, this roasted garlic asparagus is cooked on a single sheet pan with a cheesy topping.
Servings: 4 servings
- 1 lb fresh asparagus ends snapped
- 3 tbsp olive oil
- 1½ tbsp garlic minced
- salt & pepper to taste
- 1 cup mozzarella cheese shredded
- ¼ cup Parmesan cheese shredded
Spread the asparagus, evenly, in a single layer on a large sheet pan.
In a small bowl, whisk together the oil and garlic. Pour the mixture over the asparagus, and toss until coated. Spread back out into a single layer.
Liberally salt and pepper the asparagus.
Bake at 425° for 15 minutes or until asparagus is tender but not wilted.
Carefully remove the pan from the oven. Sprinkle the cheeses evenly over the asparagus. Return to over baking an extra two minutes or until the cheese is completely melted.
